Bun & Only: Indian Chef Wins Again At Burger Wellington Awards

One80’s famous Nawabi Galouti lamb burger has done it again, taking the crown at this year’s Burger Wellington, beating out nearly 200 other contenders! It’s a big deal, as One80 is the first restaurant in the competition's 15-year history to win twice—and back-to-back no less!

The Nawabi Galouti is a burger like no other, featuring a tender lamb patty, a pulled lamb shoulder filo cigar, lamb snow, and chicory, all nestled in a Clareville Bakery croissant bun. Inspired by the Awadhi Nawabs of Northern India, who were known for their love of cigars, rich food, and, well, no teeth, Chef Chetan Pangam created a ‘toothless kebab’ dish, just like the Nawabs would have loved!

Judges were blown away by the lamb’s silky, pâté-like texture and the passion that went into the burger. 

Chetan got right to work on this year’s burger after his 2023 win. 

During the three-week Visa Wellington On a Plate festival, thousands of burger lovers flocked to nearly 200 venues, devouring an estimated 200,000 burgers!

 

Fans meticulously planned their burger-eating adventures with spreadsheets and schedules to make the most of this epic celebration.

This year’s burgers were paired with Garage Project beers, and Pete Gillespie, co-founder of Garage Project, collaborated with Chef Chetan to brew Susegad, a Goan Spice Witbier, for the winning burger. Pete said, “Nawabi Galouti with Susegad was the perfect pairing. Pulling off a win twice is a huge feat, especially with the incredible competition this year.”

As a bonus for burger fans, One80 is planning a Burger Off event where you can taste both of their winning burgers from 2023 and 2024. 

In 2023, an Indian street food-inspired burger took the first prize at the Burger Wellington awards.

After a week of judging, it was decided One80 Restaurant's winning Goan Chicken Ros Pao burger was a "real flavour journey".

The burger was packed with a richly spiced chicken curry and a Ros omelette inside a unique Poee-style bread bun.

Executive chef Chetan Pangam took inspiration from his hometown of Goa and the street food there he loves.
